Recipe of the day : lamb breast with mustard
Ingredients for 4 people:
- 1.5 kg breast of lamb
- 1.5 kg of fresh broad beans with pods
- 400 g of French beans trimmed
- 2 finely sliced onions
- 2 cloves of garlic chopped
- 3 tomatoes peeled, seeded , and cut into small dice
- handful basil leaves
- Olive oil
- 3 soup spoons of mustard
- salt and ground pepper
With a brush, cover surface of the meat with mustard. Cook the beans in salted boiling water for approx 50 minutes. Cook French beans for 20 minutes in salted boiling water.
In a casserole heat a little oil, sauté the garlic and chopped onion until softened and transparent, add the tomato. Simmer for 10 minutes, place drained beans and basil leaves on top. Add salt, pepper and allow to simmer with the lid on for 10 minutes.
Preheat oven to 240°C Place meat on roasting rack and cook for 30 minutes .
Accompanied by a glass of red wine from Provence this dish will be superb !
