Recipe of the day : the basque cake

The Christmas season recalls the delicacies and  other culinary delights  With all the wonderful desserts you will taste during the festivities we suggest you try a speciality of the Pyrenees: the Basque cake. It’s at Ruisseau des Pyrenees that you will have the chance to experience this cake. 


 The ingredients  you will need (for 6 people)  

 · 5 eggs 

· 350 gr flour 

· 200 gr of butter 

· 1 lemon { zest only }

· 25 cl of milk 

· 260 gr of sugar 

 Here is the method 

 Pour 300 gr of flour into a mixing bowl, make a well in the middle and add 2 egg yolks and a whole beaten egg, 200 gr of sugar, a pinch of salt, 200 gr of soft butter and the lemon zest. To make a very smooth dough, begin by mixing eggs in the butter and sugar, then  mixing in the flour. Let it rest 1 hour in a  cool place. Meanwhile, prepare a pastry cream with 25 cl of milk, 2 egg yolks, 60 gr of sugar and 25 gr of flour. Grease and flour a springform cake tin. Using 3/3 of the dough, line the base and sides of the tin, pour in the pastry cream and cover with remaining dough.

Cook for 40 min at 180°C. Let cool completely then slice and serve .
